Sweet Potato Croquettes Recipe
Ingredients
3 cups mashed, cooked sweet potatoes
2 tablespoons melted butter
1 teaspoon salt
1/4 teaspoon cinnamon
1/4 cup sugar
5 eggs
1 1/2 cups fine dry bread crumbs
Directions
Combine sweet potatoes, butter, salt, cinnamon, and sugar; beat 2 of the eggs.
Blend into potato mixture; shape into 12 balls roll in crumbs.
Beat remaining eggs.
Dip balls in beaten eggs, then in crumbs again.
Fry in deep fat in 375° until browned; drain on absorbent paper.
