Sweet Potato-Banana Casserole Recipe
Ingredients
6 medium-size sweet potatoes, peeled and quartered
1 medium banana, mashed
1/4 cup pineapple juice
1/4 cup sugar
2 tablespoons half-and-half
1/4 teaspoon almond extract
1/8 teaspoon salt
1 1/2 cups miniature marshmallows
Directions
Cook sweet potatoes in boiling water to cover for 20 minutes or until tender.
Mash potatoes, set aside.
Combine mashed banana and pineapple juice, mix well.
Add potatoes, sugar, half-and-half, almond flavoring, and salt, mix well.
Spoon into a greased 8-inch square casserole.
Cover and bake at 350° for 30 minutes or until thoroughly heated.
Uncover.
Top with marshmallows, and bake an additional 7 minutes or until golden brown.
