Ingredients

 
2 quarts silver-skin onions
 
1/2 cup salt
 
1 quart boiling water
 
1 green pepper
 
1 sweet red pepper
 
2 tablespoons salt
 
4 cups white-wine vinegar
 
1 cup sugar
 
2 sticks cinnamon, broken
 
1 piece gingerroot or a few chili peppers

Directions

Pour boiling water over onions, and leave 2-3 minutes to soften skins.
Drain, and cool under cold water; then peel.
Sprinkle 1/2 cup salt over onions, and add the boiling water.
Let stand overnight; then drain, and rinse to remove salt.
Sliver, the green and red pepper into thin strips, and sprinkle with 2 tablespoons salt.
Leave 1/2 hour; then rinse with cold water.
Mix remaining ingredients together in a deep saucepan, and boil 3-5 minutes.
Remove spices, and add the onions and slivered peppers.
Bring just to a boil, stirring occasionally.
Watch the edge of the pan; when bubbles break around the edge, remove from heat.
Pack onions in sealers, and cover with boiling syrup.
Seal.
Makes about 4 pints.
