Rennet tablet- 1
 
Milk- 1 quart
 
Cream- as required
 
Salt- to taste

Directions

MAKING
1.Crush rennet tablet to a powder and dissolve in a few tablespoons of the milk.
2.Heat remaining milk to lukewarm (95°F.), stir in rennet, remove from heat and let stand in warm place until mixture thickens.
3.Break curd, pour into cheesecloth lined strainer and let drain very thoroughly.
4.Moisten with cream, season with salt and chill.
SERVING
5.Serve with fruit, fruit puree or on toast
