Directions

Peel the watermelon rind and cut the white solid part into pieces.
Soak overnight in brine, using 1/4-cup salt to 4 cups water.
Rinse well in cold water; drain; wipe dry and chop.
Sprinkle finely-chopped peppers, cabbage and onion with 1 cup salt and stand overnight.
Drain, place in cloth bag and squeeze out as much water as possible.
Mix the chopped vegetables and all the flavouring ingredients with the vinegar and boil for 1 hour.
Bottle and seal.
