Sweet Fruit Ring Recipe
The sweet fruit ring is made with an assortment of fruit like dried apricots and prunes. Spiced with cinnamon, the sweet fruit ring is baked in the oven with spices like cinnamon and can be served as dessert.
Ingredients
2 cups self-raising flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
120 g butter
3/4 cup milk
250 g dried apricots, finely chopped
125 g prunes, chopped
2 teaspoons lemon juice
3 tablespoons brown sugar
ICING 1 cup icing sugar
1 tablespoon lemon juice
2 teaspoons boiling water
Directions
1.
Sift flour, cinnamon and salt together.
Rub in half the butter until mixture resembles fine breadcrumbs.
2.
Add milk and mix to a soft dough.
Knead lightly.
Roll out to a 40cm x 20cm rectangle.
3.
Melt remaining butter for 1 minute on HIGH.
Stir in apricots, prunes, lemon juice and brown sugar.
4.
Preheat oven 220°C.
5.
Spread fruit mixture over dough.
Roll up lengthways (as for a Swiss roll).
6.
Form into a ring, seal ends together.
Place on a greased pizza tray.
7.
Using scissors, cut 4-5 slits in top of dough.
Brush with milk.
8.
Place on Low Rack, cook for 14-16 minutes on LOW MIX/BAKE 220°C.
9.
Allow to cool.
Spread icing over top.
ICING 1.
Mix icing sugar, lemon juice and boiling water together.

Heat for 30-40 seconds on HIGH.
