Sweet Corn Scallops Recipe
Ingredients
1 x 10 oz package frozen sweet corn
2 cups white sauce
3 tablespoons cream
Salt
Pinch each of cayenne pepper and nutmeg
1/2 cup buttered breadcrumbs
3 slices bacon
Parsley sprigs for garnish
Directions
Cook sweet corn according to directions on package, drain well.
Make the white sauce add cream and season to taste with salt, cayenne pepper and nutmeg.
Stir in sweet corn, divide between six or eight scallop dishes or shells and sprinkle with buttered breadcrumbs.
Cool, cover with clear plastic wrap or aluminium foil and refrigerate overnight.
Cut each slice of bacon into three pieces, roll each piece tightly and thread onto a meat skewer.
Wrap securely in clear plastic wrap and refrigerate overnight.
To finish and serve, remove plastic wrap or foil from dishes or shells, place them on a baking tray and bake in a moderate oven for 15-20 minutes or until heated through.
