 2 kg tomatoes chopped roughly
 Malt vinegar2 Cup (16 tbs)
 Ginger100 Gram, grated
 Garlic100 Gram, crushed
 Sultanas1 Cup (16 tbs)
 Pitted dates1 Cup (16 tbs), finely chopped
 Red chilli powder1 Tablespoon
 Salt1 Tablespoon
 Sugar1 1/4 Cup (16 tbs)

Directions

Microwave the tomatoes in a large deep bowl for 20 minutes until mushy, stirring occasionally.
Pour in the vinegar and mix in the other ingredients, and microwave, stirring in between, for 15-20 minutes until the chutney is of a thick consistency.
Cool the chutney and pour it into an air tight sterilised jar.
This chutney will keep for about 6 months.
