Ingredients
| 2 kg tomatoes chopped roughly | ||
| Malt vinegar | 2 Cup (16 tbs) | |
| Ginger | 100 Gram, grated | |
| Garlic | 100 Gram, crushed | |
| Sultanas | 1 Cup (16 tbs) | |
| Pitted dates | 1 Cup (16 tbs), finely chopped | |
| Red chilli powder | 1 Tablespoon | |
| Salt | 1 Tablespoon | |
| Sugar | 1 1/4 Cup (16 tbs) | |
Directions
Microwave the tomatoes in a large deep bowl for 20 minutes until mushy, stirring occasionally.
Pour in the vinegar and mix in the other ingredients, and microwave, stirring in between, for 15-20 minutes until the chutney is of a thick consistency.
Cool the chutney and pour it into an air tight sterilised jar.
This chutney will keep for about 6 months.
