2 pounds cleaned, cooked shrimps
 
2 cups pineapple chunks
 
1/2 cup sweet mixed pickles
 
3 tablespoons crystallized ginger, finely cut
 
1/4 cup peanut oil or margarine
 
1 cup pineapple juice
 
1/4 cup sugar
 
1/4 cup vinegar
 
1/4 cup pickle juice
 
1 tablespoon soya sauce
 
3 tablespoons cornstarch
 
1/2 cup water
 
1 green pepper, slivered

Directions

Combine shrimp, pineapple chunks, sweet pickle, ginger; heat for 2 minutes in peanut oil or margarine.
In a separate bowl, blend pineapple juice, sugar, vinegar, pickle juice, soya sauce, cornstarch and water.
Add this sauce to shrimp mixture; cook until thick and clear.
Add slivered green pepper and mix well.
Place shrimp in centre of platter.
Surround with hot cooked rice.
