Ingredients

 
1/4 cup brown sugar
 
1 1/2 tablespoons cornstarch
 
1/2 teaspoon salt
 
1/4 cup vinegar
 
1 tablespoon soy sauce
 
1/2 teaspoon ground ginger
 
1 20-ounce can pineapple chunks
 
1 green pepper, diced
 
1 medium onion, sliced in rings
 
1 pound shrimp, cleaned, shelled, and cooked
 
4 cups hot cooked rice

Directions

Into large skillet put sugar, cornstarch, salt, vinegar, soy sauce, ginger, and liquid from canned pineapple.
Stir as you cook liquid until it thickens.
Add pineapple, pepper, and onion, cook for 3 minutes.
Last, add cooked shrimp.
Continue to stir until all is hot.
Serve on a bed of rice and enjoy.
