Sweet And Sour Fish Recipe
Ingredients
1 1/2 lb any firm white fish
2 tbsp all purpose (plain) flour
2 tbsp oil
7 oz finely chopped onion
3 finely chopped garlic cloves
3 tbsp vinegar
1 oz golden raisins (sultanas)
2 tbsp nuoc-nam (Vietnamese Fish Sauce)
1/2 tsp curry powder
Salt
Pepper
1 slice spice-bread
Directions
Heat a browning-dish in the microwave oven on HIGH for 6-8 minutes according to the manufacturer's instructions.
Rinse the fish under cold running water and pat dry on kitchen paper.
Cut into 4 equal pieces.
Toss the pieces in the flour.
When the browning-dish is hot, pour in the oil and tilt the dish in all directions to distribute the oil over its surface.
Put the pieces of fish in the browning-dish, skin-side downward, and leave to cook until they stop sizzling.
Remove the fish and set aside on a plate.
Put the onions and garlic on the browning dish and micro wave on HIGH for 6 minutes.
Add thevinegar, golden raisins (sultanas), nuoc nam, curry powder and 1 cup (250 ml/8 floz) of water.
Add salt and pepper to taste.
Crumble the spice-bread into the sauce and microwave on HIGH for 4 minutes.
Stir the dish carefully.
Add the fish and stir gently to coat with the sauce.
Cover and microwave on HIGH for 5 minutes.
