Ingredients
| 1 can pineapple chunks in juice | ||
| Sugar | 1/4 Cup (16 tbs) | |

| Vinegar | 1/4 Cup (16 tbs) | |
| Soy sauce | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Garlic | 1 Clove (5gm), finely chopped | |
| 1 small green pepper, cut into 1/2 inch strips | ||
| 2 fish steaks | ||
| 1 tomato, cut into 8 wedges | ||
Directions
Drain pineapple; reserve juice.
Add enough water to reserved juice to measure 1 cup.
Mix sugar and cornstarch in 4 cup microwavable measure.
Stir in pineapple juice, vinegar, soy sauce, 1/4 teaspoon salt and the garlic.
Microwave uncovered on high, stirring every minute, until mixture thickens and boils, 3 to 5 minutes.
Stir in pineapple chunks and green pepper.
Place fish steaks in square microwavable dish, 8x8x2 inches.
Pour pineapple mixture over fish.
Cover tightly and microwave 4 minutes; rotate dish 1/2 turn.
Microwave until fish flakes easily with fork, 2 to 4 minutes longer.
Add tomato wedges.
Let stand covered 3 minutes.
