Sweet 'N Sour Meatballs Recipe

Ingredients

 
1-lb. lean ground beef
 
1/2 cup corn flake crumbs
 
1/3 cup minced onion
 
1/3 cup milk
 
1 egg, beaten
 
1 tablespoon soy sauce
 
1/4 teaspoon ground ginger
 
1/4 cup diced green pepper
 
2 tablespoons butter or margarine
 
1 can (15 1/4-oz.) pineapple chunks, undrained
 
2 1/2 tablespoons cornstarch
 
1/3 cup brown sugar, firmly packed
 
1/3 cup vinegar
 
1 tablespoon soy sauce

Directions

Mix together ground beef, corn flake crumbs, onion, milk, egg, 1 tablespoon soy sauce and ginger.
Shape into 24 meatballs.
Place in a 12x8x2 inch glass baking dish.
Cover with a paper towel.
Microwave 10 to 12 minutes, giving dish a 1/2 turn during cooking.
Place green pepper and butter in a 4 cup glass measuring cup.
Microwave 2 to 3 minutes or until tender.
Stir in pineapple chunks and juice.
Add cornstarch and stir until smooth.
Stir in brown sugar, vinegar, and soy sauce.
Microwave 5 to 6 minutes or until thickened.
Stir every 2 minutes during cooking.
Pour sauce over meatballs and stir to coat meat with sauce.
Microwave 2 to 4 minutes or until hot.
