Ingredients
1/2 cup milk
1/2 cup sugar
1 1/2 teaspoons salt
1/4 cup butter or margarine
2 envelopes active dry yeast
1/2 cup very warm water
2 eggs, slightly beaten
4 1/2 cups all purpose flour
Directions
1. Heat milk with sugar, salt and butter or margarine in a small saucepan; cool to lukewarm.
2. Sprinkle yeast and 1 teaspoon sugar into very warm water in a large bowl. ("Very warm" water should feel comfortably warm when dropped on wrist.) Stir until yeast dissolves; let stand until mixture bubbles, about 10 minutes, then stir in cooled milk mixture and beaten eggs.
3. Beat in half of the flour until smooth with a wooden spoon; add remaining to make a stiff dough.
4. Turn out onto a lightly floured pastry cloth or board; knead until smooth and elastic, adding only enough extra flour to keep dough from sticking.
5. Place in a greased large bowl; turn to coat all over with shortening; cover with a clean towel. Let rise in a warm place, away from draft, 1 hour, or until double in bulk.
6. Punch down; knead a few times.
