Sweet Tinda Pickle Recipe
The sweet tinda pickle is a spiced and sweet vegetable pickle. Made with tinda or ridge gourd, it is prepped with a medley of spiced and has onions in it too. Sweetened with jaggery, it is a cooked pickle and is set in the sun once prepared to mature.
Ingredients
| Tinda | 1/4 Kilogram, cut into pieces | |
| Red chilli pepper 3 tsp | ||
| Black pepper | 2 Teaspoon | |
| Mustard powder | 8 Teaspoon | |
| Spices | 3 Teaspoon | |
| Tamarind | 60 | |
| Garlic | 2 Teaspoon, sliced | |
| Ground ginger | 2 Teaspoon | |
| Onions | 2 | |
| Jaggery .- 180 grns | ||
| Mustard oil | 1 1/2 Cup (16 tbs) | |
| Vinegar | 1 Cup (16 tbs) | |
| Salt 30 grits | ||
Directions
1) Soak the tamarind in vinegar.
2) Grind garlic and onion.
3) Heat the oil until smoky and fry garlic and onion mixture until they turn into light brown.
4) Fry the ginger, red chilli pepper and tinda pieces altogether.
5) Saute the spices, mustard, salt, pepper, crushed jaggery and tamarind with vinegar for a few minutes.
6) Remove from fire, cool and put in a jar.
7) Keep in the sun for 3 days and shake it every other day.
