Sweet Swedish Braid Recipe
Ingredients
1 package fresh yeast
3/4 cup milk
1 tablespoon sugar
2 teaspoons salt
4 cups flour
3 tablespoons butter
1/4 cup sugar
1 egg
1 teaspoon lemon juice
Directions
Dissolve yeast in lukewarm water according to instructions on package.
Scald milk add 1 tablespoon sugar and the salt.
Cool to lukewarm.
Combine with yeast; add 1 1/2 cups flour; beat until perfectly smooth.
Cover and let rise in warm place till light (about 50 minutes).
Cream the butter; add sugar, well beaten egg, and lemon juice.
Add to first mixture.
Sift in remaining flour; this should make a stiff dough.
Knead till smooth and elastic.
Place in greased bowl, cover and let rise till double in bulk.
Punch down to release gas bubbles.
Turn on lightly floured board and knead again lightly.
Roll into rectangular roll cut in 3 strips to within 1/2 inch of end.
Braid, and place on greased baking sheet.
Let rise till light (about 1 hour).
Bake in hot oven 400° F. for 15 minutes, reduce heat to 350° F. and bake another half hour.
When cool, ice with the following icing.
