2 cup all-purpose flour
1/2 tsp baking powder
1/2t. baking soda
1/4 tsp salt
1/2 cup solid vegetable shortening
3/4 cup granulated sugar replacement
1 large egg
3 tsp skim milk
1 tsp vanilla extract
1 tsp grated orange peel
3 env. aspartame sweetener
Directions
Sift the flour, baking powder, baking soda, and salt together into a bowl.
Combine the solid shortening and sweetener in a mixing bowl.
Beat until creamy.
Beat in the egg, milk, vanilla extract, and orange peel.
Blend in the flour mixture.
Lightly grease two large cookie sheets.
Roll dough out on a lightly floured surface to 1/8 in. (8 mm) thickness.
Cut with a doughnut cutter, Transfer dough rounds to prepared cookie sheets.
Gather and reroll scraps.
Cut additional cookies.
Bake at 375°F (190°C) for 14 minutes or until edges of cookies are golden brown.
Remove from oven.
Sprinkle cookies with aspartame sweetener (use one envelope for eight cookies).
Move cookies to cooling rack.
