Sweet Sour Spinach Recipe

Ingredients
1 pound fresh spinach, Washed and chopped
2 slices bacon, cut in small pieces
1 teaspoon all-purpose flour
1 teaspoon sugar
1/4 cup half-and-half
1 tablespoon cider vinegar
Directions
1. Cook spinach. Drain.
2. Put bacon into a 1 1/2-quart glass casserole. Cover with a paper towel. Cook in microwave oven 1 1/2 minutes at High, or until bacon is crisp.
3. Pour off all but 1 tablespoon fat. Add flour to fat and blend. Stir in sugar and half-and-half. Cook uncovered in microwave oven 1 1/2 minutes at High, or until thickened; stir once.
4. Add vinegar to mixture in casserole; stir. Add chopped spinach and mix well. Cover with waxed paper. Heat in microwave oven to serving temperature (about 2 minutes at High).
