Sweet & Sour Fish Recipe
Sweet and sour fish is a fruited fish preparation. Made with a sauce of pineapple juice and soy sauce flavored with added tomato ketchup, the sweet and sour fish is coated with it and microwaved to cook. Served with extra sauce spooned over it, it makes a quick and peppy meal.
Ingredients
1 1/2 pounds fresh or thawed fish fillets, 1/2 inch thick
1 can (6 oz.) unsweetened pineapple juice
1/4 cup Soy Sauce
1/4 cup water
1/4 cup sugar
2 tablespoons cornstarch
3 tablespoons vinegar
2 tablespoons tomato catsup
Dash ground red pepper (cayenne)
1/4 cup minced green onions and tops
Directions
Microwave Directions: Place fish in single layer in large microwave-safe dish; set aside.
Combine pineapple juice, soy sauce, water, sugar, cornstarch, vinegar, catsup and red pepper in 2-cup microwave-safe measuring cup.
Microwave on High 5 minutes, or until mixture boils and thickens, stirring occasionally to prevent lumping.
Remove 1/4 cup sauce and pour over fillets, turning each piece over to coat both sides.
Keep remaining sauce warm.
Cover fish with waxed paper; microwave on High 8 minutes, or until fish flakes easily when tested with fork, turning dish once.
Remove fillets to serving platter with slotted spoon.
