Sweet & Sour Fish Recipe

Ingredients
1 cup (240 ml) carrots, julienned
1/2 cup (120 ml) thinly sliced celery
1/2 cup (120 ml) thinly sliced onion
2 tsp (10 ml) vegetable oil
1/2 cup (120 ml) orange juice
1/4 cup (60 ml) honey
1 tsp (5 ml) grated fresh ginger root
1/2 tsp (3 ml) salt pinch black pepper pinch cayenne pepper
1 1/2 lbs (683 g) halibut steaks or snapper filets
Directions
Stir-fry vegetables in oil in medium skillet until crisp-tender.
Add orange juice, honey and seasonings; bring mixture to a boil.
Arrange fish in 13x9x2-inch oiled baking pan.
Spoon vegetable mixture over fish.
Bake covered at 425°F (220°C) allowing 10 minutes per inch of thickness of fish or until fish flakes when tested with a fork.
