Sweet Sour Beets Recipe

2 tbsp. margarine
1/4 c. vinegar
3 tsp. minced onion
1-2 tbsp. horseradish
2 tbsp. brown sugar
1 20 oz. tin diced beets
2 tsp. cornstarch
1/2 tsp. salt and f.g. pepper
Directions
1. Melt the margarine in a saucepan.
2. Cook the minced onion in the margarine for 2-3 minutes.
3. Mix sugar with cornstarch, then stir into the margarine.
4. Add the vinegar and horseradish.
5. Cook, stirring until it is thick and clear.
6. Add beets, salt and pepper, and heat.
