Sweet Rice Soup With Pine Nuts Recipe
Ingredients
| 1/2 cup sweet glutinous rice | ||
| 6 cups water or as needed | ||
| Sugar | 1 Cup (16 tbs) | |
| Vanilla extract | 1 Teaspoon | |
| Salt | 1 Dash | |
| Toasted pine nuts | 1/2 Cup (16 tbs) | |
| Dates | 1/3 Cup (16 tbs), chopped | |
| Golden Raisins | 1/3 Cup (16 tbs) | |
| 1/2 cup pineapple chunks, cut in small pieces | ||
| 1 large apple-pear, peeled, cored, diced | ||
| Ground cinnamon | ||
| Red beans | 1/2 Cup (16 tbs), sweetened | |
| 1/3 cup diced dried persimmons or dried apricots | ||
Directions
Rinse rice in a medium-size bowl of cool water, removing any foreign material.
Pour off milky water.
Continue rinsing until water runs clear.
Cover rice with fresh water; soak overnight.
Drain rice.
In a medium-size saucepan, simmer rice and water over medium-low heat until rice is tender.
Thin with additional water if mixture thickens beyond the porridge stage.
Stir in sugar, vanilla, salt and nuts.
