Ingredients

 1/2 cup sweet glutinous rice
 6 cups water or as needed
 Sugar 1 Cup (16 tbs)
 Vanilla extract1 Teaspoon
 Salt1 Dash
 Toasted pine nuts1/2 Cup (16 tbs)
 Dates1/3 Cup (16 tbs), chopped
 Golden Raisins1/3 Cup (16 tbs)
 1/2 cup pineapple chunks, cut in small pieces
 1 large apple-pear, peeled, cored, diced
 Ground cinnamon
 Red beans1/2 Cup (16 tbs), sweetened
 1/3 cup diced dried persimmons or dried apricots

Directions

Rinse rice in a medium-size bowl of cool water, removing any foreign material.
Pour off milky water.
Continue rinsing until water runs clear.
Cover rice with fresh water; soak overnight.
Drain rice.
In a medium-size saucepan, simmer rice and water over medium-low heat until rice is tender.
Thin with additional water if mixture thickens beyond the porridge stage.
Stir in sugar, vanilla, salt and nuts.
