Sweet Potatoes With Sherry Or Orange Juice Recipe

3 pounds sweet potatoes (about 9 small or 6 large)
 
1/2 cup (1/4 lb.) butter or margarine, melted
 
1/2 cup Sherry or orange juice
 
1/4 teaspoon nutmeg Cinnamon
 
1/2 teaspoon grated orange peel
 
Salt and pepper to taste
 
Brown sugar

Directions

Boil sweet potatoes in their jackets for 20 to 30 minutes, or until tender; peel and mash well.
Add butter, Sherry, nutmeg, 1/4 teaspoon cinnamon, orange peel, salt, and pepper; whip until fluffy. (Add a little water or orange juice if the mixture seems too dry.) Pile in a greased shallow baking dish; sprinkle lightly with brown sugar and cinnamon.
Bake in a 400° oven until top is lightly browned.
