Ingredients

 500 g / 1 lb sweet potatoes, cut into 2.5 cm / 1 inch cubes
 Oil4 Tablespoon
 Onions2 , sliced
 Garlic1 Clove (5gm), crushed
 125g / 4 oz / 1 cup pine nuts, toasted
 500 g / 1 lb fresh spinach
 Garam masala1 Teaspoon
 Red chillies2 Teaspoon, chopped
 Water2 Tablespoon
 Freshly grated nutmeg to serve

Directions

1. Boil the sweet potatoes in salted water for 5 minutes until half cooked. Drain and set aside.
2. Heat the oil in a Balti pan or wok, add the onions and stir-fry until golden brown.
3. Add the garlic, sweet potatoes and pine nuts to the pan and stir-fry for 2 minutes until the sweet potatoes have absorbed the oil.
4. Stir in the spinach, garam masala and dried chillies and stir-fry for 2 minutes. Add the water and stir-fry for 4 minutes until the sweet potatoes and spinach are tender.
