Sweet Potatoes In Oranges Recipe
Ingredients
| Oranges | 3 Medium, halved | |
| 1 1/4 pounds sweet potatoes, cooked, peeled, and mashed | ||
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Eggs | 2 | |
| Sugar | 2 Tablespoon | |
| Ground cinnamon | 1/8 Teaspoon | |
| Ground allspice | 1/8 Teaspoon | |
| Marshmallows | 3 , halved | |
Directions
Advance preparation: Squeeze juice from orange halves (refrigerate juice to use as desired).
Scrape out inside of orange halves.
In bowl combine potatoes and butter.
Beat in eggs, sugar, cinnamon, and allspice.
Season to taste with salt and pepper.
Fill orange cups with sweet potato mixture.
Place in 11x7 1/2x1 1/2 inch baking pan.
Cover; chill till baking time.
Before serving: Uncover the potato filled oranges and bake at 350° for 35 minutes.
Place a marshmallow half on each; continue baking till the marshmallows are lightly browned, 4 to 6 minutes.
