Ingredients

 Sweet potatoes1 pound, peeled
 Skim milk1/3 Cup (16 tbs)
 Honey3 Tablespoon
 Vanilla extract1 Teaspoon
 Cinnamon powder1 Teaspoon
 Unsweetened pineapple juice- 6 tablespoons
 Unsweetened flaked coconut - 3 tablespoons, powdered fine

Directions

MAKING
1. In an electric mixer, combine all the ingredients apart from pineapple juice and coconut. Puree till smooth.
2. Pour into individual dessert glasses and top with equal quantities pineapple juice and coconut.

SERVING
3. Serve immediately or chilled, as desired.
