Sweet Potato Pie Recipe
Ingredients
| Unbaked pie shell | 9 inch | |
| 2 cup sweet potato puree | ||
| Eggs | 2 Small | |
| Granulated Sugar | 1/2 Cup (16 tbs) | |
| 2 tsp dietetic maple syrup | ||
| Vanilla extract | 1 Teaspoon | |
| 1/2 tsp cinnamon, nutmeg, salt | ||
| Skim milk | 1 1/2 Cup (16 tbs) | |
| 1 recipe meringue topping | ||
Directions
Combine sweet potato puree, eggs, sugar replacement, maple syrup, vanilla, spices, and skim milk in a large bowl.
Beat to blend.
Pour into unbaked pie shell.
Bake at 400°F (200°C) for 45 to 50 minutes or until knife inserted in center comes out clean.
Cool slightly.
Spread meringue over pie, sealing edges.
Bake at 350°F (175°C) for 10 to 12 minutes or until the peaks begin to brown.
Beat to blend.
