Sweet Potato Pie Recipe

Ingredients
4 medium-size sweet potatoes pastry for Basic Flaky Piecrust
4 tablespoons butter, softened
3/4 cup honey
3 eggs
1 cup milk
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
3 tablespoons butter
3 tablespoons honey
1/2 cup ground walnuts
Directions
Peel sweet potatoes, and cook in enough water to cover until tender.
Drain, and puree.
Preheat oven to 425°F.
Roll out pastry, and line a 9-inch deep-dish pie plate with it.
In a medium-size bowl, beat 4 tablespoons butter until fluffy.
Beat in 3/4 cup honey and then eggs.
Place sweet potatoes into a large bowl.
Beat in butter mixture, then milk, and spices.
Turn into pie shell, and bake on middle shelf of oven for 10 minutes.
Reduce heat to 325°F, and bake for 1 to 1 1/2 hours, or until a knife inserted into the center comes out clean.
Cool.
In a medium-size saucepan, melt 3 tablespoons butter.
Add 3 tablespoons honey, and bring to a boil.
Stir in nuts, and pour on top of pie.
Chill.
