Ingredients

 1 cup cooked, mashed sweet potatoes
 Evaporated milk1 Cup (16 tbs)
 1/4 cup brown sugar, packed
 1 egg, slightly beaten
 Salt1/2 Teaspoon
 Cinnamon1/4 Teaspoon
 Ginger1/4 Teaspoon
 1 teaspoon grated lemon rind
 Margarine1 1/2 Tablespoon, melted
 Mincemeat package1
 1 9-inch unbaked pie shell

Directions

GETTING READY
1. Preheat the oven to 450°F.

MAKING
2. Take a saucepan and add sweet potatoes, milk, sugar, egg, seasonings, rind and margarine to it and cook it over low heat for about 3 minutes. Ensure that the mixture is stirred at regular intervals.
3. Make mincemeat by adhering to directions strutted over the package. Spread this mixture towards the bottom of pastry in pie dish and spread potato mixture over it.
4. Bake the mixture in hot oven for 15 minutes at 450° F and bake for another 25-30 minutes by reducing the temperature to 350° F. Ensure the correct baking texture by inserting the silver knife if it comes clean then the mixture is properly baked.

SERVING
5. Serve as required.
