Yam, Feta Cheese and Pine Nuts Strudel Recipe Video
Ingredients
| Sweet potato | 450 Gram, cut into 0.75 inch cubes | |
| Olive oil | 2 Tablespoon (For Brushing) | |
| Pine nuts | 80 Gram, toasted under a hot grill | |
| Feta cheese | 200 Gram, crumbed | |
| Chopped basil | 2 Tablespoon | |
| Spring onion | 4 , chopped | |
| Filo pastry sheets | 5 | |
| Sesame seeds | 3 Teaspoon |

Directions
Brush the sweet potato with 1 tbsp olive oil and bake in the oven for approx 20-25 minutes, until it has softened.
Place in a bowl and allow to cool slighty.
Add the feta, basil, and spring onion and season with a little salt and pepper. Mix gently.
Brush one sheet of the filo with a little olive oil.
Place another shhet of filo on top of the first sheet and brush with a little olive oil.
Repeat the process until all the filo pastry is used.
Spoon the prepared filling at the bottom edge of the filo pastry.
Fold the sides of the pastry in slightlyinto the centre, then roll the strudel up tightly.
Carefully turn the strudel over and place on a baking tray, seam side down.
Lightly brush the top with a little more olive oil and sprinkle with the sesame seeds.
Bake for 25-35 minutes or until the pastry is crisp.
