Sweet Potato Cookies Recipe
Ingredients
| Sugar | 1/4 Cup (16 tbs) | |
| 3 pkts. concentrated acesulfame-K | ||
| 4 cup nonfat cream cheese | ||
| 1 cup sweet potatoes, cooked, mashed | ||
| Butter margarine | 1/4 Cup (16 tbs) | |
| 1 egg or egg substitute | ||
| Oats | 2 Cup (16 tbs) | |
| Cinnamon | 1 Teaspoon | |
| Baking soda | 1/2 Teaspoon | |
| Ground cloves | 1/4 Teaspoon | |
| 1 apple, peeled, cored, and chopped fine | ||
Directions
Beat together the sugar, acesulfame-K, and cream cheese until smooth.
Add all the other ingredients except the chopped apple.
Beat the mixture well, then stir the apple in.
Drop the batter by tablespoonfuls onto a cookie sheet coated with non-stick cooking spray.
With the back of a spoon, press each cookie into a patty.
Bake in a 350°F (180°C) oven for about 15-20 minutes.
Cool the cookies on a wire rack.
Add all the other ingredients except the chopped apple.
Beat the mixture well, then stir the apple in.
