Sweet Potato Cheesecake Recipe
Ingredients
| Sour cream | 1/2 Cup (16 tbs) | |
| 3/4 cup cooked mashed cold sweet potatoes | ||
| 3 tablespoons baby food apricots | ||
| Lemon juice | 1 Tablespoon | |
| Milk | 1/8 Cup (16 tbs) | |
| 1 box cheesecake mix | ||
Directions
Mix sour cream, sweet potato, apricots, lemon juice, and milk and blend thoroughly.
Add cheesecake mix and beat 3 minutes until thick.
Turn into crumb crust prepared according to directions on package.
Reserve a few crumbs to sprinkle on top, or top with sour cream topping.
Bake at 400°F for 8 minutes.
Chill 2 hours or more.
