Directions

GETTING READY
1. Peel about 2 1/2 pounds the sweet potatoes, slice vertically and then horizontally to get dices.

MAKING
2. Add the diced potatoes to a pot with water and a pinch of salt.
3. Place on high heat and boil until the potatoes are just tender.
4. Check for the doneness of the potatoes using a knife.
5. Drain them and transfer back to the pot.
6. Add 2 tablespoons butter and mash together with a potato masher. Set them aside.
7. In a bowl add 2 large eggs, maple syrup, real vanilla extract, a pinch of cayenne a dash of olive oil, a pinch of salt butter milk and regular milk.
8. Mix well using a wire whisk.
9. Once done add the mashed potatoes and whisk.
10. Add the potatoes spoon by spoon.
11. Once done, transfer the mixture to a casserole dish.
To make the crust :
12. Chop roasted salted pistachios and add to a bowl.
13. Add light brown sugar and melted butter and mix together well.
14. Scatter the crumbles of the crust evenly on top of the potatoes in the casserole.
15. Press the crust down gently using the back of a fork.
16. Place in a 350 degree F oven for about 25-30 minutes.

SERVING
17. Serve as an after dinner dessert.
