Directions

Steam sweet potatoes in a pot with a tight fitting lid, using 1/2 cup water, for 15-20 minutes, until tender.
Peel, slice lengthwise, 1/2 inch thick, and layer them in a casserole.
Peel and core apples, slicing them 1/2 inch thick.
Lay apple slices on top of sweet potatoes.
Heat apple juice to the boiling point.
Combine cornstarch and water and add to juice, cooking until sauce is clear and thickened.
Add honey.
Spoon sauce over apples, then top with wheat germ.
Bake in preheated oven for 45 minutes to an hour or until apples are tender.
