Ingredients
2-3 raw chicken breasts
2 crushed cloves garlic
1-2 teaspoons ginger sherry
Pinch each salt and Ve-Tsin
2 shakes pepper
1 dessertspoon beaten egg
2-3 tablespoons self-raising flour
Deep peanut oil
PLUM SAUCE
2 tablespoons canned plum sauce
3-4 tablespoons hot chicken stock
1 tablespoon dark sugar crystals
1 tablespoon hot water
Directions
Cut the chicken breasts into thinnish scallops about 3 1/2 inches long.
Add the garlic and then the sherry and seasonings.
Work them well into the chicken pieces.
Next, add the beaten egg and work it in too.
Discard the garlic.
Dip the strips of chicken in the flour and shake off excess.
Work the flour well into the chicken.
Meanwhile, have the oil heating to 375°F. or 190°C.
Drop the chicken pieces into it and cook to a golden colour, separating the pieces during the cooking, if necessary.
Drain, place on a heated serving dish and hand the hot sauce separately.
TO MAKE THE PLUM SAUCE Blend together the canned plum sauce and stock.
Dissolve the sugar in the hot water and add it.
Heat together, then rub through a sieve.
Add the garlic and then the sherry and seasonings.
