I hadn't made Sweet Pepper Fritters in a few years in spite of the fact that it was on my favorites list. And after I got back this Sweet Pepper Fritters recipe, it's the dish that is cooked the largest number of times at home. So what are waiting for!

4 sweet peppers
Salt and pepper
1/2 cup (125 ml) flour
2 eggs, beaten
1/2 cup (125 ml) bread crumbs
3 tbsp (45 ml) butter
Directions
– Preheat broiler.
– Slice peppers in half lengthwise and place on a cookie sheet, then broil until peel begins to brown. Remove from heat, place in a plastic bag and close tightly.
– After 10 minutes, peel pepper halves with small paring knife and remove seeds. Slice halves in half and season with salt and pepper.
– Dredge pepper strips with flour, dip into beaten egg, coat with breadcrumbs and set aside.
– In a skillet, melt butter and cook pepper slices on all sides until golden. Drain on paper towel and serve.
