Put the flour in a large bowl, making a depression in the center.
Add the dissolved yeast and milk, the sugar, and the salt.
Add 1 egg yolk and mix well.
Liberally dot the mixture with 1/4 pound of the butter; knead it quickly and lightly.
Roll out the dough on a floured board to a large square.
Dot this with the other 1/4 pound of butter.
Cover the dough and set it in the refrigerator for 15 minutes.
Put the dough on the flour-covered work surface and roll it out again to a square.
The butter should now be worked into the batter.
Knead the dough 4 times and let it rest in the refrigerator.
Repeat this process again.
Then let the dough rest for 30 minutes at room temperature.
Roll out the dough for the final time to about 1 inch thick and 10 inches long, so that you can cut sticks about 1 inch wide.
Cut and form these sticks into pretzel shapes.
Put them onto a greased cookie sheet.
Brush the pretzels with egg yolk.
Then sprinkle them with coarse salt or sugar, according to your taste.
Bake the pretzels at 425°F for 20 minutes.
Allow them to cool before serving.
