Directions

MAKING
1.In a blender put the eggs and add all the other ingredients.
2.Blend for about 30 seconds, until completely blended.
3.Allow batter to “rest” in refrigerator for at least one hour or overnight.
4.Heat an 8-10 inch crêpe or sauté pan over medium heat
5.Brush pan with butter.
6.Pour just enough batter to coat the bottom and lowest edges of the pan.
7.Pour batter into center of pan first, and then swirl pan quickly to move batter around bottom of pan so that it’s coated with a thin layer of batter.
8.Let it cook for about 30 seconds (until it’s lightly browned on the bottom and bubbles appear around the edges).
9.Flip and cook for another 15 seconds or so.
10.Remove from pan to cool.
11.Continue cooking crêpes until batter is used up.

SERVING
12.Serve the crepes filled with filling of choice.
