Sweet Corn Soup Recipe
Ingredients
| Corn cobs | 4 | |
| Onion | 1 , chopped | |
| Water | 1/2 Pint | |
| Butter | 1 Ounce | |
| Flour | 1 Ounce | |
| Milk | 1/2 Pint | |
| Salt | To Taste | |
| Pepper | 1 | |
| Single cream | 1 Teaspoon (Leveled) | |
| Sherry | 1 Teaspoon (Leveled) |
Directions
Remove the green leaves from the corn, and put corn cobs (split down the centre if wished) with the onion into a pan of water and simmer steadily until the corn is soft.
Strip off the cob.
Make a white sauce with the butter, flour and milk, add the 1/2 pint of water in which the corn and onion were cooked, straining this if wished.
Stir the corn into the sauce, and season very well.
Add the cream and sherry.
