Sweet Corn Relish Recipe

Ingredients
8 ears corn, husks and silk removed, or 4 cups frozen whole kernel corn thawed
3 tablespoons fresh lime juice
2 tablespoons olive oil
3/4 teaspoon ground cumin
3/4 teaspoon ground coriander
3/4 teaspoon salt
1/2 teaspoon chili powder
1 large red pepper, diced
Directions
If using fresh corn, with sharp knife, cut kernels from cobs (you should have about 4 cups).
Heat large saucepot filled with water to boiling over high heat.
Add fresh corn; heat to boiling.
Boil 30 seconds.
Drain corn; rinse under cold running water and drain again.
In medium bowl, with wire whisk or fork, mix lime juice, olive oil, cumin, coriander, salt, and chili powder.
Add corn and red pepper; toss well.
Cover and refrigerate until chilled, about 2 hours.
