Sweet Apple Frittata Recipe
Ingredients
| Tart apple | 1 , thinly sliced | |
| Golden Raisins | 1/3 Cup (16 tbs) | |
| Walnuts | 1 Tablespoon, finely chopped | |
| Honey | 1 Tablespoon | |
| Ground cinnamon | 1 Teaspoon | |
| Nutmeg | 1/2 Teaspoon, grated | |
| Ground cloves | 1/4 Teaspoon | |
| Oil | 1 Teaspoon | |
| 2 cups fat-free egg substitute | ||
| Margarine | 2 Teaspoon | |
Directions
In a large no-stick frying pan over medium heat, saute the apples, raisins, walnuts, honey, cinnamon, nutmeg and cloves in the oil for 7 minutes, or until the apples are just tender.
Transfer to a large bowl.
Add the eggs.
Wipe out the frying pan, then place it over medium-high heat and let stand for about 2 minutes.
Add 1 teaspoon margarine and swirl the pan to distribute it.
Add half of the egg mixture.
Lift androtate the pan so that the eggs are evenly distributed.
As the eggs set around the edges, lift them to allow uncooked portions to flow underneath.
Turn the heat to low, cover the pan, and cook until the top is set.
Invert onto a serving plate.
Cut into wedges.
Repeat with the remaining 1 teaspoon margarine and egg mixture.
