Sweet and Sour Turkey Recipe

Ingredients

 Nonstick spray coating
 4 turkey breast tenderloin steaks, cut 1/2 inch thick (about 1 pound)
 1/2 of a 6-ounce can (1/2 cup) frozen pineapple juice concentrate, thawed
 Water1/4 Cup (16 tbs)
 Red wine vinegar1/4 Cup (16 tbs)
 Soy sauce1 Tablespoon
 Garlic powder1/4 Teaspoon
 Ground ginger1/4 Teaspoon
 Cold water2 Tablespoon
 Cornstarch1 Tablespoon
 1 11-ounce can mandarin orange sections, drained
 16-ounce package frozen pea pods

Directions

Spray a cold large skillet with nonstick coating. Preheat skillet over medium heat, then add turkey steaks. Cook over medium heat for 5 to 7 minutes or till turkey is light brown, turning steaks once.
Meanwhile, for sauce, in a small bowl stir together pineapple juice concentrate, water, vinegar, soy sauce, garlic powder, and ginger.
Add sauce to skillet. Bring to boiling; reduce heat. Simmer, covered, for 12 to 15 minutes or till turkey is no longer pink. Transfer turkey steaks to a serving platter. Cover to keep warm.
In a custard cup stir together water and cornstarch. Stir mixture into sauce in the skillet. Cook and stir over medium heat till the mixture is thickened and bubbly.
Stir orange sections and frozen pea pods into mixture in the skillet. Cook and stir about 2 minutes or till heated through. Spoon oranges, pea pods, and sauce over turkey steaks. Garnish with tomato wedges, if desired.
