Ingredients

 Rice vinegar1/4 Cup (16 tbs)
 Teriyaki sauce2 Tablespoon
 Cornstarch2 Teaspoon
 Chinese sesame oil - 1/2 teaspoon
 Peanut or Vegetable oil - 1 1/2 teaspoons
 Shitake or White mushrooms - 1 cup, sliced
 Red bell pepper1/2 Cup (16 tbs)
 Scallions - 1/2 cup, diagonally sliced
 Garlic1 Clove (5gm), minced
 Ginger root1 Teaspoon, grated
 Medium shrimp - 5 ounces, shelled and deveined
 Nectarines10 Ounce, blanched
 Frozen imitation fish - 2 ounces, thawed and sliced
 Pepper - A dash (optional)

Directions

MAKING
1) Combine together the vinegar, teriyaki sauce, cornstarch and Chinese sesame oil in a 1-cup liquid measure. Stir well to dissolve the cornstarch. Set the mixture aside.
2) Heat the peanut or vegetable oil in a 10-inch skillet.
3) Add the garlic, ginger, vegetables and gingerroot.
4) Cook the ingredients over moderate-high heat, frequently stirring, till the vegetables are tender-crisp. This usually takes about 3 minutes.
5) Add the shrimp and combine by quickly stirring.
6) Add the vinegar mixture and cook, constantly stirring, till the mixture has thickened.
7) Reduce the heat to low and add the nectarines, imitation fish, and if suing, the pepper. Stir well.
8) Cook the ingredients till thoroughly heated. Takes about 1 to 2 minutes of cooking.

SERVING
9) Serve while the preparation is still hot.
