Ingredients
| L 1/2 lbs. boneless pork, cut in cubes | ||
| 2 tbsp. soya sauce | ||
| Vegetable oil | 1 Tablespoon | |
| Garlic | 1 Clove (5gm) | |
| Vegetable oil | 2 Tablespoon | |
| 2 medium onions, cut in eighths | ||
| 1 green pepper, cut in small cubes | ||
| White sugar | 1/3 Cup (16 tbs) | |
| Cornstarch | 2 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Vinegar | 1/3 Cup (16 tbs) | |
| Water | 1 Cup (16 tbs) | |
| Tomato Paste | 3 Tablespoon | |
| 1 large tomato, cut in small wedges | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Toss pork cubes in mixture of soya sauce and 1 tablespoon oil; marinate 15 minutes.
In large frying pan brown garlic in 2 tablespoons oil.
Remove garlic, brown pork cubes in the oil, then reduce heat a little and cook about 5 minutes, stirring often.
Sprinkle lightly with salt and pepper.
Add onions and green pepper; stir fry 2-3 minutes.
While meat and veggies are cooking make sauce.
In heavy saucepan mix sugar, cornstarch and salt.
Stir in vinegar, water and tomato paste.
Bring to boil, stirring till smooth and clear.
Cook meat until tender, drain excess fat.
Add sauce, simmer for a minutes, taste and adjust seasoning.
Add tomato cut in wedges.
Cover pan and cook gently just until heated through.
Serve over rice with green peas on the side.
