Ingredients

 Pork10 Ounce
 Frying Oil2 Cup (16 tbs) (For frying)
 Chicken stock1/2 Pint
 2 tsp brown sugar, 2 tsp tomato ketchup
 1 tbsp cornflour, 1 tbsp vinegar
 1 carrot cut in strips
 2 tsp soy sauce, 2 tsp lemon juice. 1 small garlic clove

Directions

MAKING
1. Marinate the pork in soy sauce, lemon juice, crushed garlic and four tablespoons of pineapple juice overnight
2. Drain the juices away and brown the pork in hot oil; add marinade and stock and allow to simmer for half an hour
3. Adrain away the remaining pineapple juice, add to a pan and blend the rest of the ingredients into it, barring the carrot
4. Add cooking stock and allow to boil; addd pork pieces, pineapple and carrot and simmer for ten minutes

SERVING
5. Goes well with boiled rice or chips
