Fried Sweet And Sour Pork Recipe

Ingredients
3/4 Ib. lean boneless pork
1 small glass prunelle
1 tablespoon soy sauce
Salt
Fat for deep frying, heated to 350-375°
Batter
1 egg, slightly beaten
1/2 teaspoon sugar
1/2 cup light beer
1 teaspoon oil
1 cup flour
2 tablespoons cornstarch
1/2 teaspoon salt
Sauce:
2 tablespoons peanut oil.
1 large garlic clove, crushed
1 green pepper, cut in small pieces
1 carrot, cut in julienne strips
1/2 cup chicken broth
2 tablespoons honey; or use 3 tablespoons sugar
1 tablespoon soy sauce.
3 tablespoons red wine vinegar
1 piece crystallized ginger, minced
4 or 5 cocktail onions
1 tablespoon cornstarch
Directions
Cut pork into bite sized pieces.
Marinate several hours in a mixture of prunelle, soy sauce and salt.
For batter, combine all the ingredients in a bowl and beat until smooth.
Let rest 30 minutes.
For sauce, heat oil in saucepan or skillet; add the garlic and cook 1/2 minute.
Then add the green pepper and carrot and saute about 3 minutes, stirring constantly.
Stir in a mixture of the broth, honey (or sugar), soy sauce, wine vinegar and minced ginger.
Simmer 8 to 10 minutes.
Add onions (if used).
Thicken sauce with cornstarch mixed with several tablespoons cold water.
When ready to serve, dip pieces of pork in batter and deep fry in hot fat until golden.
