 Plaice fillets4 Large, skinned
 Celery stalks2 , chopped
 Carrot1 , peeled and chopped
 Onion1 , peeled and sliced
 Salt To Taste
 Freshly ground black pepper To Taste
 Dried breadcrumbs2 Ounce (50 gram)
For sauce
 Butter1⁄2 Ounce (15 gram)
 Flour1⁄2 Ounce (15 gram)
 Sugar1 Ounce (25 gram)
 Sultanas1 Ounce (25 gram)
 Lemon1 , juiced
 Onion1⁄2 Small, peeled and finely chopped

1.Preheat the oven to 350 degrees.

2.Take a pan, put vegetables, salt, pepper and folded fish fillets in it.
3.Pour water enough to cover the ingredients.
4.Let the ingredients simmer for 10- 15 minutes until the fish is soft.
5.Strain the stock and keep aside 2/3 cup.
6.Meanwhile, in a pan, heat the butter and add flour to it.
7.Cook for 2 minutes by stirring.
8.Add resreved stock and let the mixture boil.
9.Cook the mixture by simmering until thick.
10.Add sugar, sultanas, lemon and onion along with salt and pepper and cook for 10 minutes.
11.Turn off the flame.
12.Transfer the fish to ovenproof dish and pour the sauce over it.
13.Add a sprinkling of breadcrumbs and bake for 25 minutes.

14.Serve warm.

The dish can be freezed prior to baking. At the time of serving it should be thawed and baked.
