Sweet And Sour Meatballs Recipe

These sweet and sour meatballs are prepared with ground beef, eggs and crumbs. Skillet cooked with fruity apricot preserves and beef bouillon, these meatballs are simmered to a finish and can be served with a fresh parsley garnish.

Ingredients

 
1 1/2 pounds lean ground beef
 
1 cup fresh bread crumbs (2 slices)
 
1 egg, slightly beaten
 
4 teaspoons Beef-Flavor Instant Bouillon
 
1 1/3 cups Apricot Preserves
 
2 tablespoons Lemon Juice from Concentrate

Directions

In large bowl, combine meat, crumbs, egg and 2 teaspoons bouillon; mix well.
Shape into 11/4-inch meatballs.
In large skillet, brown meatballs.
Remove from pan; pour off fat.
In same skillet, combine preserves, and remaining 2 teaspoons bouillon.
Over low heat, cook and stir 10 minutes.
Add meatballs; simmer, uncovered, 10 minutes.
Garnish with parsley, if desired.
Refrigerate leftovers.
