Sweet And Sour Meatballs Recipe
Ingredients
1 pound ground beef
1 egg
2 tablespoons cornstarch
2 tablespoons finely minced green onion
1 teaspoon salt
Dash pepper
1 can (16 ounces) pineapple chunks, drained (reserve juice)
1/2 cup sugar
3 tablespoons cornstarch
1 tablespoon soy sauce
3 tablespoons vinegar
4 cups cooked rice
Directions
1. In a medium mixing bowl, blend ground beef, egg, cornstarch, onion, salt, and pepper. Shape 1 tablespoon mixture around each pineapple chunk. Reserve remaining pineapple.
2. In a glass pie plate, arrange meatballs evenly around edge. Cook 5 to 7 minutes, stirring to rearrange meatballs halfway through cooking time.
3. In a 2-cup glass measure, blend sugar, cornstarch, soy sauce, vinegar, and reserved pineapple juice.
4. Cook sauce 2 to 3 minutes, or until mixture begins to boil, stirring after every minute.
