Ingredients

 Raw mangoes - 1 kilo, peeled and grated
 Mustard seeds25 Gram
 Sugar1 Cup (16 tbs)
 Turmeric powder1 Tablespoon
 Chilli powder25 Gram
 Ground cumin seeds - 1 tablespoon
 Cloves5
 Cinnamon stick2
 Oil250 Gram
 Salt To Taste

Directions

GETTING READY
1. Pound whole cloves and cinnamon to a coarse powder.
2. Wash the mangoes and cut into small pieces.
3. Keep in a bowl and sprinkle salt and turmeric powder over it.
4. Keep aside for 6 hours.
5. Squeeze out water from it.

MAKING
6. In a skillet heat oil until smoking. Toss in asafoetida and mustard seeds.
7. When seeds stop spluttering add remaining spices and mix well.
8. Take off from heat.
9. Let the oil cool, add mangoes and sugar.
10. Keep in a clean jar and pour oil on top.

SERVING
11. Keep aside for 4 days before using it.
